These banana bread cookies tastes just like bite size versions of the real thing. Making them the perfect cookies for breakfast or brunch.
And super healthy too as they are not only vegan but the recipe uses no oil, sugar or flour. Healthy or what?
The flavour is there, the texture is there, you will love this healthy cookies.

The Ingredients
- Banana: any kind (no plantains), make sure they are very ripe as they are the only source of sweetness in your cookies.
- Oats: rolled, not instant. If you want to use oat flour instead of the part of the recipe we blend our oats the result will be pretty much the same (1/2 cup oat flour + 1/2 cup rolled oats) instead of (1/2 cup beaten oats + 1/2 cup rolled oats). However replacing the oats completly by flour or instant oats will change a lot the texture.
- Flaxseed(linseed): their role here is to serve as a binding ingredient, as we are skiping oil and (obviously)eggs. You can use only flaxseeds or only chia. However I have mixed them as I do prefer chia when baking but the flaxseeds give a crunchiness welcome in a cookie recipe.
- Chia seed: see above. And if you want to know both seeds better, HealthLine is a nice easy source.
- Vanilla: it adds to the banana bread aroma. I have mixed with rum extract with good results too.
- Cinnamon: I wouldn’t skip it, it is very important to the banana bread flavour.
- Chocolate: optional. I prefer to chop a bar so the pieces are bigger, they don’t mix so much in the cookies and add to the rustic look too. You can add raisins instead.
How to Make Banana Bread Cookies
Blend the chia and flaxseeds together, reserve. Do the same with half the oats.
Mash the bananas.
Mix all the ingredients with the exception of the blended oats and chocolate pieces. This oat flour you add slowly until well mixed.
Take a spoonful of dough, place on parchment paper. With the help of a fork flatten the dough gently into cookies or leave them just scooped for the rustic look.
Add the small pieces of chocolate ( I prefer not to mix them as the ones on the edges finish on the baking tray…)
Bake in a preheated oven at 350 F for about 30-40 minutes.
Wait for the cookies to cool before serving.

Oats, rolled, 1 1/2 cup

Chia seed, 1 tablespoon

Chocolate(optional), 70% , 1/2 cup chips or 1/2 bar
