These Pineapple Balls are a vegan dessert made with only 2 ingredients, both fruits. Seriously, you don’t need anything else to make yourself the healthiest vegan dessert recipe ever.
It is so easy and budget friendly and delicious in a way nobody will ever guess what you used, or didn’t use.

What makes this one of my favorite vegan desserts is that it represents exactly what I have been searching since going vegan. That is, to explore more all non-animal sources of food, and adding more to my plate by doing so.
And these simple and healthy Pineapple Balls are just that, a fruit explored to the fullest. Ready for some exploring?

The Ingredients for Pineapple Balls
- Pineapple: choose one that is already super ripe. It will be a lot sweeter and less acidic.
- Coconut: I prefer the drier version in this recipe (not usually) because the pineapple balls are already quite moist. After a bit in the fridge the coconut reaches a perfect texture.








How to Make the Vegan Dessert
We peel the pineapple completely and chop it roughly, even the hard yellow middle. Place all in a blender and mix until it is as smooth as possible. About 5 minutes.
All the juice goes to a pan. Choose one that is easy to hold and large, it will reduce the cooking time.
Now you mix, with a long spoon, for about 25 minutes. The time really depends on how high you manage to leave the heat and mix in order to keep the pineapple bubbles from flying everywhere.
Don’t worry if you need a break and change once in a while to low heat. It will only increase the time.
When the mixture is not bubbling anymore, it is detaching easily from the pan and the consistency is similar to mash potato, it is ready.
Leave in the fridge, spread on a plate, or freezer for about an hour, until is completely cool to the touch.
Now you just take little chunks and roll them with your hands. Pass over a plate with the grated coconut and leave in the fridge for at least another hour before serving.

It is only fruit! Enjoy guilty-free!

Ingredients
Pineapple, very ripe
Coconut, grated and dried
Directions
- Peel pineapple and chop in cubes.
- Blend until smooth, move to a large pan and place on medium to high heat.
- Mix continuously until it doesn’t bubble anymore and the consistency is similar to mash potato. It depends on the heat but should be 30-45 minutes.
- Spread on a plate and lei it cool completely in the fridge for 1 hour, freezer is ok too.
- Take small chunks and roll them into balls. Pass on the dried coconut. Another hour in the fridge and they are ready to serve.
